A cheese modeled after the Spanish sheep's milk Manchego, this Wisconsin wedge is made using Roth Kase Cellars local cow's milk. Look for the textured exterior, which comes from the baskets used to drain the cheeses, and the ruddy exterior, which gains its coloring from a cinnamon rubdown. The cheese itself is sharp, nutty, and sweet, thanks to over six months of aging.
