Peaches grown in the northeast are considerably different from California-grown fruits. They have a pointier shape with a deeper crevice dividing the two halves, freestone variety. They also sport a pronounced acidity - a bracing, fresh lift that completely refreshes the palate. Eat when just starting to slightly soften - they will have a slick of juice right under the skin.
