The full-flavored, golden flesh of a Delicata is a bit fibrous, with a sweet corn taste. The skin is quite thin, so no peeling is necessary. Delicatas are perfectly portioned for two people, and can be eaten skin-and-all. They're also the most perishable fall/winter squash because of this thin skin - they only keep a couple weeks at room temperature.
