They source from four unique regions, each area being made up of different soil structures, climate, sunlight and grass types that result in varying flavor profiles. Their lambs graze on volcanic high plains in lush, clean pastures and clear air. This environment, along with the cooler climate, produces a sweeter, tender, tightly grained meat.
