A small version of curly, coarse chicory in a loose, open head with a delicate and bittersweet flavor. California frisee has a wider halo of dark green prickly leaves surrounding the pale golden inner heart which is also tenderer. It is a sturdy yet delicate variety of chicory that stands up well to vinaigrettes, even when dressed beforehand. Italian grown frisee has a greater proportion of ivory and pale yellow tendrils.
