Frisee is a curly type of chicory with finely cut, twisted leaves that are dark green at the base fading to a lighter lemony color towards the core. Our area farmers are working on nicely blanched frisee, which indicates tenderness. They start covering it when almost three fourths grown. The endive-ike, bittersweet flavor is a delicious addition to any salad and its lovely aesthetics make it a wonderul garnish.
