Beecher's Flagship Reserve is a special version of their signature Flagship cheese. It's made only on days when the milk composition is just right. The last curds on the table are used to produce the truckles for this reserve, as they yield lower moisture, higher salt and a richer taste and texture. It's cloth-bound and open-air aged for a year, concentrating the already rich flavor and long, creamy finish.
